
Kazu Takahashi
(born 1954) |
Was apprenticed as sushi chef as an 18 years old directly on graduation
from college. Opened his first sushi restaurant in Tokyo in 1979.
In 1984 was offered a 3 year contract to work as a sushi chef in Australia.
On completion of his contract he opened the Sushi Bar Rashai in 1987.
Kazu has two beautiful daughters Fumi and Miki with his wife.
Besides his obvious love for his sushi business,Kazu's interests include underwater photography,distance running (he has completes every City to Surf since 1989)and he also is a keen competitor in open water swimming events. |

Hiroyuki Shimazaki
( born 1975) |
Was born in Tochigi Prefecture. After graduated from high school he started
to be trained at one of the most famous sushi restaurant and bar "Tsukiji
Edo Gin" Tokyo.
After 6 year his endeavor in Tokyo, he went back home his home town and worked there as a sushi chef.
One of Hiroyuki’s interests is Golf. He is sigle-handicap golfer. Though
he is a new comer, he already got a hole-in-one here in Australia! |

Kyoichi Higashi
(born 1961) |
He's got more than 20years of experience as a Japanese cuisine
chef and also qualified as a chef for Fugu ( Poisun Fish ). Lives in
Nutral Bay and father of 3 Children. He is avid for fishing. So, Rashai
staff always enjoy his catch.

Zaman |
Born in Bangladesh
Received a ten-year hard training in Japan to be a Japanese cuisine chef.
Since he came to Rashai, a regular customer has been more pleased to come
here because of Zaman's delicious a la carte dishes that change day to
day.
He is a fluent speaker of Japanese. Perhaps he speaks Japanese better
than native Japanese speakers do! He has two kids with his Japanese wife.
One of his hobbies is fishing, and he goes fishing every week during the
season. If you come to Rashai on Tuesday, the day after our restaurant
is closed, you might be able to get fishes fresh from the sea!! |
